We have a nice foodservice supply store/business in midtown Kansas City called Ambroise. They probably sharpen knives for every major kitchen in Kansas City. They have about every Wusthof knife there is. Some I’ve never even seen before. Stopped in last week while I was downtown and picked up a couple new knives for the collection. Oh, I’m a Wusthof guy.
I’ve wanted a large slicer like this Wusthof for some time. Wife got me a seraded one a couple years ago, but tears up my brisket something terrible. It’s a stamped Wusthof and not forged, but even the stamped Wusthofs are better than most knives. It as on sale because it had a logo for a California Culinary school on it.
Ambroise also has several bargain bins. I found this Dexter meat cleaver for $5. Its not pretty, but is heavy as hell and has a really great edge on it. I rarely have a need for a cleaver, but for $5 I couldn’t pass up a good one like this.
